Sushi Nori quality is directly tied to when in the season it's harvested. The first harvest (November to April) yields younger, more tender fronds — the chlorophyll content is higher, the texture more delicate, and the flavour cleaner and more complex. Later-season nori is cheaper to produce but chewier and more bitter.
Our sheets are produced by Xihe, a BRC Grade A supplier managed by Kozen — a Japanese investor with over 130 years' focus on nori production. Each sheet is roasted to the right level of crispness, then sealed individually in a zip-lock pack to protect against moisture after opening. High protein at 45.4g per 100g, high fibre at 32.4g — genuinely nutrient-dense.
